cooking raw and vegan desserts…

Tuesday, September 29th, 2009

one of my hobbies is to collect cookbooks and the newest edition to my cookbook collection is…

This was on my amazon wish list and I received it as a birthday gift about a month ago. There are wonderful simple recipes, but there are some interesting ingredients that usual kitchens do not have. One of the ingredients is agave nectar a sugar substitute. It is commercially produced in Mexico, made from a cactus like plant called Blue Agave or Tequila Agave and it is sweeter then honey. Other ingredients that she uses a lot is raw cashew and coconut oil for dairy substitute, to create creamy texture without dairy products. Here is a very simple recipe of a yummy dessert from the book…

mango sorbet

mango sorbet

2 cups chopped Frozen Mango
1 cup  Filtered water
1/3 cup Agave syrup

In your high-speed blender, place frozen mango with just enough water to keep your mixture moving. Blend until smooth. Spoon mix into a container, and store in the freezer for a few hours until desired consistency.

Enjoy~!!!
